Breakfast of champions

I’ve never been one to say ‘no’ to a breakfast date, but once you’ve had a taste of the following you’ll never leave your bed again for bacon, eggs and potatoes for a Sunday brunch in an overcrowded neighborhood joint!

The ingredients:

  • A loaf of farmhouse bread
  • A bunch of green asparagus
  • A bunch of your favorite mushrooms
  • Smoked duck
  • Brie cheese (or camembert… nothing too strong)
  • An egg
  • Olive oil
  • Maple syrup (or honey)
  • Old fashioned mustard
  • Salt and pepper

A new take on a one-sided BLT

How to do it:

Preheat oven at 350. In the meantime, cut the your asparagus into inch long  pieces, slice your mushrooms, and cut a few thin slices of cheese.

In a small bowl, whisk a teaspoon of mustard and olive oil. Salt, pepper and sweeten with the maple syrup to taste.

In a medium pan, heat about the tablespoon of olive oil. Add in mushrooms and cook for about 4 minutes until the edges are crispy. Add in the asparagus and cook until bright green. Salt and pepper to taste.

Drizzle some olive oil on your slice of bread and pop into the oven until it gets golden (about 5 minutes).

In a small cooking pot, add water and  a little vinegar, salt your water and bring to a boil. As soon as little bubbles start forming, create a swirl in the water by using your spoon’s handle , gently crack open your egg into the centre of your swirl and  lower the heat to med-low. In approximately 3 minutes, you’ll have an egg, poached to perfection! Remove it from the water and put it aside (if you have a small sieve, that’s even better!).

Remove your bread from the oven, garnish with your veggies, cover with your slices of cheese, layer your smoked duck, drizzle some of the maple-dijon dressing on top, place your poached egg over it all and ENJOY!
